Polpi Ricette 07: Crème Fraîche Cake with Cardamom

Recipe 07 is written for winter kitchens and glowing tables. Crème fraîche cake with cardamom carries the scent of spice and butter through the house — a gentle, festive dessert to bring to the Christmas table. This recipe was created in collaboration with Sibille from Batter


Ingredients

150 g crème fraîche
150 ml olive oil
3 eggs
200 g sugar
½ tbsp lemon zest
230 g flour
¼ tbsp salt
300 g plums (sliced into 6 pieces each)
200 g figs (quartered)
¼ tbsp ground cardamom (grind fresh seeds for better flavor, or use pre-ground)


Instructions

Preheat oven to 180°C (fan). Grease and flour a 20–26 cm round baking tin.

Blend crème fraîche, olive oil, eggs, sugar, and lemon zest until smooth.

Mix in flour, baking powder, and salt for 1 minute.

Pour batter into the tin. Arrange plums and figs on top, pressing slightly into the batter.

Combine cardamom with 3 tbsp sugar and sprinkle over the fruit.

Bake for 60–65 minutes or until a toothpick comes out clean.

Enjoy warm or cold.
