Polpi Ricette 06: Red Wine Pears

Where else but at the countless tables around our world do we truly come together? Polpi Ricette is a curated collection of recipes intended to be shared with family and friends.

Recipe 06 celebrates slow cooking and deep flavors. Red wine–poached pears are simple in ingredients, yet rich in aroma and color — a dish meant for long evenings and shared plates. This recipe was created in collaboration with Sibille from Batter.


Ingredients

6 pears (your choice of variety)
2 bottles of red wine
150g sugar


Instructions

Peel the pears.

Combine red wine and sugar in a large pot. Heat on the stove until the sugar dissolves completely.

Add the pears to the pot. Simmer on low heat for 3-4 hours, turning occasionally with a wooden spoon for even coloring.

Add cinnamon sticks, cloves, and orange zest during the final hour for a festive flavor. Pears are ready when they have a deep red color.

Carefully remove pears and transfer to an airtight container with the wine mixture. Let cool, seal, and refrigerate. Consume within 1-2 days.

Pair with cheese for a savory option or serve as dessert with warm vanilla sauce.
